Vegan Banana Bread with Peanut Butter Swirl


Introducing the Vegan Banana Bread with Peanut Butter Swirl 🍌🍌🍌 This is my go-to, guilt-free healthy snack to have on hand all year round. It's quick and easy to whip up. You can mix it up with just about anything and swap out the peanut butter for strawberries or pear.


Plant-based, dairy-free, no eggs and vegan-friendly!

Ingredients

  • 4 ripe bananas (the more ripe the better)

  • 1/4 cup oat milk (any non-dairy milk is fine but oat milk is my personal favourite for extra creaminess)

  • 2 cups self raising flour

  • 1/2 cup of melted coconut oil or vegan butter

  • 1 cup brown sugar

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1 tsp white vinegar

  • 2 tbsp peanut butter for the swirl (you can substitute anything you like here. Coconut flakes also work a treat!)

  • 1 sliced banana for topping

  • Sprinkle of cinnamon sugar to serve


Method

  1. Preheat the oven to 180C.

  2. Line a loaf pan with nonstick spray or baking paper.

  3. In a blender, blend the 4 bananas and 1/2 cup oat milk.

  4. Then add the 2 cups self raising flour, 1/2 cup of melted coconut oil, 1/2 cup light brown sugar, 1 tsp vanilla extract, 1 tsp baking soda, 1 tsp white vinegar, and 1 tsp cinnamon.

  5. Transfer the batter to the loan pan roughly mix in the 2 tbsp peanut butter for the swirl.

  6. Top with the extra banana slices.

  7. Bake for 45 minutes then check if cooked on the inside. If it needs more you can cover with foil and bake for an additional 15 minutes (this will make sure the centre is cooked without the outside being overcooked).

  8. When finished remove from oven and sprinkle with cinnamon sugar and peanut butter to serve.
